Ristretto (It. "Restricted")With less water, yielding a stronger taste (10–20 ml) Ristretto is a very "short" shot of espresso coffee. originally this meant pulling a hand press faster than usual using the same amount of water as a regular shot of espresso. since the water came in contact w/ the grinds for a much shorter time the caffeine is extracted in reduced ratio to the flavorful coffee oils. the resultant shot could be described as bolder, fuller, sweeter w/ more body & less bitterness. all of these flavours are usually attributed to espresso in general, but are more pronounced in Ristretto. Because of this exaggerated flavour, Ristretto is often preferred by espresso coffee lovers. today, w/ the hand press out of favour Ristretto usually just means less water; our double espresso shot is 50 ml, while our double Ristretto is 25 ml.

Cortado (Sp./Port. “Cut”)Espresso "cut" w/ a small amount of warm milk. A Cortado is an espresso “cut” w/ a small amount of warm milk to reduce the acidity. The ratio of milk to coffee is between 1:1, & the milk is added after the espresso. It is popular in Spain & Portugal, as well as throughout Latin America, where it is drunk in the afternoon. in Cuba, it is known as a Cortadito, & in Catalan it's called a Tallat.

CappuccinoAn Italian coffee drink prepared w/ espresso, hot milk, & steamed-milk foam a cappuccino is similar to a caffè latte in that both add steamed & foamed milk to the espresso, but differs in two respects. firstly, a cappuccino is traditionally prepared w/ much less steamed or textured milk than a latte – the latte is claimed to have been invented as simply a cappuccino w/ more milk, to suit American tastes. secondly, cappuccinos feature a distinctive layer of foam on top, which is lesser or absent in lattes.

Macchiato (It. “Stained”)Espresso w/ a small amount of milk “Macchiato” simply means “marked” or “stained”, & in the case of caffè Macchiato, this means literally “espresso stained / marked w/ milk”. traditionally it is made w/ one shot of espresso, & the small amount of added milk was the “stain”. however, later the “mark” or “stain” came to refer to the foamed milk that was put on top to indicate the beverage has a little milk in it. the reason this coffee drink got its name was that the baristas needed to show the serving waiters the difference between an espresso & an espresso w/ a tiny bit of milk in it.

Americano (It. “American”)Espresso & hot water, using equal parts each, w/ the water added to the espresso caffè americano, or Americano (Italian: American coffee) is a style of coffee prepared by adding hot water to espresso, giving a similar strength but different flavour from regular drip coffee. the strength of an Americano varies w/ the number of shots of espresso & the amount of water added. the name derives its origins from ww2 when American gis in Europe would pour hot water into espresso to approximate the coffee to which they were accustomed.

Espresso (It. “Fast”)A drink that results from forcing water through finely ground coffee resulting in a full extraction of coffee flavour in vast contrast to other coffee brewing methods, espresso often has a thicker consistency, & topped w/ a rich golden crema (foam) . as a result of the pressurized brewing process, all of the flavours & chemicals in a typical cup of coffee are very concentrated. for this reason, espresso is the base for other drinks, such as lattes, cappuccino, Macchiato, Mochas, & Americanos.

Flat WhiteA coffee drink made from a Ristretto or espresso base & textured milk w/ a small layer of foam to the top of the drink originating from the antipodes - Australia & New Zealand. as w/ many other espresso-based drinks the flat white is interpreted in a number of ways. our flat white is served using a double shot of Ristretto for a more concentrated, sweeter coffee flavour w/ the signature Rosetta latte art on.

The Italian form means "coffee & milk", similar to the french café au lait, the Spanish café con leche & the Portuguese café com leite.

Mocha a Latte w/ ChocolateA café mocha is a variant of a cafe latte. Like a latte it is one third espresso & two thirds steamed milk, but a shot of chocolate is added. Chocolate dustings of cocoa may also be added on top for flavour. Mocha was originally a particular variety of coffee from mocha, yemen, made without cocoa, but which tasted as if it had cocoa in it, & modern usage usually refers to an imitation of it using other coffee varieties & cocoa.

Latte Macchiato (It. “Stained Milk”)Essentially an inverted caffè latte, w/ the espresso poured on top of the milk a latte Macchiato is prepared simply by textured milk being poured it into a glass, & adding espresso after. the espresso is gently poured through the milk so that it forms a layer between the denser liquid milk below & the lighter foam above. this drink is served in a glass to show the coffee & milk layered in the drink.
