Thank you for taking the time to share your detailed feedback. We are sincerely sorry that your main course did not meet your expectations. Technically, the cook clearly made a mistake in the preparation of your schnitzel, and we want to apologize for that. This is not the standard we aim for, nor the level of quality we expect from our kitchen. However, we cannot accept the assumption that we use old or poor-quality frying fat. We strictly follow all hygiene regulations — and in many areas we even exceed them. We work exclusively with fresh clarified butter (Butterschmalz), and our filtration, cleaning, and replacement cycles are followed rigorously. The black burnt specks you described are much more likely the result of the cook not filtering the Butterschmalz between batches, which is a crucial step. Filtering prevents small pieces of breadcrumbs from burning and remaining in the hot fat. It appears this step was skipped — and it should not have happened. We will address this issue directly in our next kitchen meeting, because we do not consider this acceptable. Thank you again for your feedback. Despite this negative experience, we would be glad to welcome you back and show you that we can—and usually do—deliver much better quality, especially on a classic dish like the Wiener Schnitzel.
