This visit was a couple weeks ago and I normally wouldn’t bother writing a review this late, but it’s stuck with me enough that I felt like I should. First off, I actually really liked the space and vibe when we walked in. I’d heard a ton about Gateau Ghost and was excited to finally try it. Unfortunately, we stood at the entrance with another group for probably 15-20 minutes before anyone even acknowledged us. I completely understand being busy, especially at a hyped and popular brunch spot, but there’s a difference between waiting and standing there wondering if anyone has even noticed you exist. By that point we honestly felt a little stupid for still standing there. Eventually someone came over and told us it would be another 10 minutes. No problem. We understood they were slammed and were happy to wait. My buddy and I eventually got seated at the kitchen counter, which we were actually stoked about. We’re fatties and genuinely enjoy watching chefs prep food, so normally those are some of my favourite seats in a restaurant. Unfortunately, watching the kitchen work ended up being the problem. The main prep area is directly in front of the counter and below eye level, with seemingly nothing separating the people sitting there from the food being prepared. We’d smoked a joint before coming in and both had a bit of a smoker’s tickle, which suddenly made us painfully aware that if either of us coughed straight ahead, we were basically coughing toward the kitchen and other people’s food. So there we are, two idiots strategically coughing over our shoulders trying to be respectful, and then I started watching the pancakes being made. The chef was using what appeared to be a probe thermometer to check their internal temperature. Totally normal. What caught my attention was what he did with it between checks. He would take the probe out of the pancake and rest/press it into the crease directly below his bottom lip where it meets his chin, basically in/around the goatee or soul-patch area, and then put it back into the food. I watched this happen multiple times and never noticed the probe being sanitized in between. I’m assuming there was some chef logic behind it. Maybe he was gauging the temperature of the probe against his skin or it’s some technique I’m completely unfamiliar with. I genuinely don’t know. Maybe I’m just a germaphobe. But from two feet away, all I could see was pancake thermometer goatee/soul-patch region thermometer pancake. Repeat. Meanwhile, my buddy and I are performing Cirque du Soleil in our chairs every time we need to cough because we’re so concerned about breathing in the general direction of somebody’s brunch. I’m not trying to claim Gateau Ghost is violating health codes or pretend I know the rules governing an open kitchen. Maybe the setup is completely standard and maybe there’s context to the thermometer technique that I’m missing. The space itself is beautiful, the food clearly has a huge following, and I understand why people are excited about the place. But between waiting 15-20 minutes just to be acknowledged at the door, sitting directly over an active prep area with no apparent barrier, and watching the thermometer situation unfold a couple feet away, I walked out questioning my sanity and, more importantly, my sanitary expectations. Maybe I really am just a germaphobe. Either way, I’ve apparently discovered a new brunch preference at 30 years old: I prefer my pancakes with as little goatee involvement as possible.
