So I left this review 8 years ago. Siagon maxim has been a consistent staple in my go too places to eat out since then. The staff is always attentive, the food is always consistently excellent. I have gotten to know the owners and they are also great people, if there was ever something wrong I know they would make it right. 1000% would always reccomend this place. I ordered the sweet and sour soup with chicken and vermicelli, and the vermicelli lemongrass chicken. What I received was the sweet and sour soup with a few thin slices of chicken, approximately three large sliced celery stalks, and, I kid you not, a mountain of bean sprouts. The other dish, at least, contained a sprinkle of vermicelli, but it mostly consisted of bean sprouts. I like bean sprouts, however, a noodle replacement they are not. The only explanation I can come up with is that they ran out of vermicelli and used bean sprouts instead, hoping no one would notice. But what Vietnamese restaurant runs out of vermicelli?? Unheard of. I double checked their menu and my order to make sure I didn't select the "biggest pile of bean sprouts" option instead of the more common "vermicelli" option, but everything was fine on the ordering end. I called the restaurant, not to complain, per say, but I was genuinely curious to find out what happened. Did they actually think I wouldn't notice? Did they run out of noodles? Did they order a lifetime supply of bean sprouts and desperately needed to use them up? I needed to know. Admittedly, I called the incorrect location. The person who answered the phone was very pleasant and explained that she was the manager at the location I called, and that my order came from the other store. I said, 'oh sorry. Thank you. I'll call the other location." She stopped me and said that she would talk to the manager over at the other place and that he would give me a call right away. She took my information and, again, promised that I would receive a callback. I can only assume the other store was absolutely covered in an avalanche of bean sprouts, because I did not receive a callback. I've included some pictures. One shows some of the bean sprouts I pulled out of the soup (I left a reasonable amount in, as I said, I do enjoy them) and the other shows the lemongrass chicken with bean sprouts, and sprinkled with what I can only assume were the very last broken noodles that you find at the bottom of an empty vermicelli bag. The soup would have been enjoyable if it included more chicken, and as you could have guessed, any amount of vermicelli, and way, way, way less bean sprouts. For $20+, I expect more. But also less. Edit for clarity after reply from owner: There was literally no vermicelli included with the soup. I guess it was intentional and I should have specifically called and asked for vermicelli, even though the dish is supposed to come with noodles. Oh well. I'm glad they didn't run out of essential ingredients. They just chose to not include them. Neat. Food: 1 Service: 3 Atmosphere: 3 Order type: Delivery Price per person: $20–30

We understand why you were disappointed, and we take that seriously.We always aim to serve our community well and get things right for every guest. Regarding the portion, that particular dish leans heavier on vegetables for balance and gut health rather than protein. All our dishes are prepared according to a standard recipe, but we’re happy to adjust -just let us know if you’d prefer more chicken, fewer bean sprouts, or extra vermicelli next time, and we’ll gladly accommodate.We have plenty of vermicelli on hand and never substitute it. We’re not sure where that idea came from, but it isn’t the case. Online orders are prepared the same way as in-store ones. Bean sprouts are limited because we source them from a long-trusted indoor grower we’ve worked with for years. Looking at the photos you shared, the amount included was intentional and meant to add freshness and value.We did try to reach you last night but believe we had the wrong number. If we’d connected, we would have sorted this out right away. We’re grateful the assistant manager at the Mission location stepped in to help and make things smoother for you after the mix-up with the phone numbers.Vermicelli naturally comes in a mix of lengths, so some shorter pieces are normal. If you’d like to avoid third-party fees in the future, you’re always welcome to call the store directly or pick up your order - we’re happy to help either way.We wanted to make this right from the start and still would. Please give the correct location a call so we can take care of you properly.
