WOW. We dined at Satsuki and did the omakase after our trip to Banff. The restaurant was recommended to us by the Fairmont Chateau Lake Louise. I have an extensive culinary background. I have worked for some of the best in the world (Keller, Waters, Lettuce Entertain You, Sysco). I've also opened multiple restaurants and served as a consultant to some of the most successful restaurant groups from California to the Midwest. A few places I've been in comparison are NAOE in Miami, Moody Tongue Sushi Palm Beach, Sushi Ran Sausalito, Kado No Mise Minneapolis, Osaki's Vail, multiple Nobu locations and Sushi Hil Vancouver. Chef May Ng is a star. Her attention to detail and knowledge of how to manipulate ingredients to enhance Japanese cuisine is impressive. It isn't often I experience something new or can say its the best I've ever had. Some of her dishes were the best I have ever had in over 30 years of fine dining experience. Her service was phenomenal. She is a pure joy to be around. I suspect eventually someone will discover her ability and toss a ton of money her way to cook for the ultra wealthy. Visit Satsuki soon. Get the omakase. Let Chef do her thing. Enjoy every little detail. The freshness, the subtle twist on standard ingredients and her refined skill. Honestly the freshest sushi I've had other than fresh off the dock. Calgary has a huge talent hiding in their city. If you get the standard rolls you will have a good experience. If you get the omakase you will be impressed. Don't expect powerhouse dining like a Nobu. Satsuki is smaller and independently run by the Chef herself. If you are looking for great food, can appreciate a rising star before they become the next big thing and go in with reasonable expectations knowing this is a small independently owned restaurant then you should be nothing short of amazed. Don't expect a purse stool or an edible menu or molecular gastronomy small plates like Alinea. But you can expect the same attention to detail, love, knowledge of how to use ingredients, flavors, textures and small twists that make great places stand apart from good. We also had two children under the age of 10 who enjoyed the standard menu. My daughter age 11 had the omakase and loved all of it except the uni. Which to be fair is an very advanced flavor and texture. I found the uni excellent. Sake list was awesome too! Pricing for the omakase was fair all frills aside. But considering the experience as a whole the pricing felt like a steal. If I lived in Calgary I would go weekly. You aren't going for omakase to get a deal. The standard sushi is very well priced. To Calgary residents I urge you to support her. Don't let someone take her from you until she's had a long successful run. Cute neighborhood too! Had an excellent omakase experience last evening. The fish was fresh, our host/server/ sake sommelier May took excellent care of us explaining all of the dishes in detail with tailored sake pairings that brought out the best flavors in each dish. Michelin worthy meal. Highlights were the house made pickled ginger, fresh wasabi, Hokkaido scallops, abalone with yuzu, king salmon, blue tuna, Japanese imported fishes ( seabream yum!), and uni with snow crab topped with caviar. One of the best omakase experiences I've had and I have lived in Japan. Meal type: Dinner Price per person: $100+
