Went up to Banff with a few friends last Friday and we ended up at Vistas Dining Room for dinner, which honestly turned out to be the highlight of the whole trip. The elk medallions were incredible, cooked perfectly and the sauce had this rich depth that made it hard not to order a second plate. Our server was super attentive without being overbearing, kept checking in just enough and gave great suggestions when we were debating between dishes. The views of the mountains through those big windows as the sun was going down made the whole evening feel pretty special, definitely one of those spots we'll be coming back to.
