Hi Alexi, I’m sorry we could not accommodate your friend. But it is not an issue of the expense of a gluten free option. It is that our kitchen is very small for the amount of food it produces. We are unable to have a dedicated space for gluten free dishes. There is flour present our kitchen as we make pizzas and coat chicken for our chicken parm ( to name a few dishes) Flour becomes air born, so can get onto cooking utensils. For a person with celiac there can be no traces of gluten anywhere in that kitchen for fear of cross contamination of that persons dish. We take food allergies very seriously and would never want to make anyone sick. We do have options made without gluten - Caprese salad, the burgers can be done with a lettuce wrap with a side salad or even our baked whole fish to name a few. There are options, we can’t guarantee cross contamination because it is necessary for us to have flour in the kitchen and our kitchen being the size it is
